Turkey Meatballs with Zucchini Noodles

Ingredients

  • 1/2 lb lean ground turkey
  • 1 tsp salt-free Italian herb blend
  • 2 medium zucchinis, spiralized into noodles
  • 1 cup no-salt-added crushed tomatoes
  • 1 clove garlic, minced

Instructions

  1. Roll ground turkey and herb blend into 1-inch meatballs.
  2. In a large skillet, cook meatballs over medium heat until browned on all sides (about 8 mins).
  3. Add minced garlic and crushed tomatoes to the pan. Simmer for 10 minutes until meatballs are cooked through.
  4. In a separate pan, lightly sauté zucchini noodles for 3 minutes until warm but still firm.
  5. Top zoodles with meatballs and sauce.
