Mediterranean Lentil Lettuces Wraps

Ingredients

  • 1/2 cup brown lentils, rinsed
  • 1/2 cup cucumber, diced
  • 1/4 cup kalamata olives (rinsed, light amount to limit sodium)
  • 1 tbsp fresh parsley, chopped
  • 6 large romaine lettuce leaves

Instructions

  1. Boil lentils in 1.5 cups of water until tender (about 20 mins). Drain and let cool.
  2. Mix cooled lentils with cucumber, olives, and parsley.
  3. Spoon the lentil mixture into the center of the romaine leaves.
  4. Serve chilled.
