  • 1 green bell pepper, sliced
  • 1/2 onion, sliced
  • 1 tbsp olive oil
  • 1 tsp fajita seasoning (salt-free)

  1. Toss chicken and vegetables in olive oil and fajita seasoning.
  2. Heat a large skillet over medium-high heat.
  3. Grill chicken and vegetables for 10-12 minutes, stirring frequently, until chicken is cooked through.
  4. Serve in a bowl (over cauliflower rice if desired).
