Cauliflower Rice Veggie Stir-Fry

  • 12 oz riced cauliflower
  • 1 cup bell peppers, diced
  • 1/2 cup snow peas
  • 2 tbsp coconut aminos (low sodium soy sauce alternative)
  • 1 tbsp sesame oil

  1. Heat sesame oil in a wok or large skillet over medium-high heat.
  2. Stir-fry bell peppers and snow peas for 3-4 minutes until tender-crisp.
  3. Add cauliflower rice and coconut aminos.
  4. Toss constantly for 5-7 minutes until the cauliflower is tender.
