Healing Cabbage Soup

Ingredients

  • 1/2 head of cabbage, chopped
  • 1 cup celery, diced
  • 1 cup onions, chopped
  • 1 (14oz) can no-salt-added diced tomatoes
  • 4 cups low-sodium vegetable broth

Instructions

  1. In a large pot, sauté onions and celery in a splash of broth until soft (about 5 mins).
  2. Add the chopped cabbage, diced tomatoes, and remaining vegetable broth.
  3. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes until vegetables are very tender.
